I recommend using the hand blender when making soy milk mayonnaise. Add dijon mustard, apple cider vinegar and soy milk in a narrow bowl that the blender can enter. While mixing the mayonnaise with the blender, add the oil to the mixture at a constant speed so that it flows gently. Mayonnaise is ready when it gets thick. You can add “togarashi” (Japanese spice mix) or cayenne pepper to add a little more flavor.
