What is Tuile?

A tuile is a baked wafer, French in origin, generally arced in shape, wafer thin, crisp, sweet, or savory, that is made most often from dough, often served as an accompaniment of other dishes. Tuile is the French word for tile, after the shape of roof tiles that the arced baked good most often resembles.

  • Put the egg whites in a mixing bowl,
  • Add a pinch of salt and powdered sugar…
  • Then add the flour and mix all the ingredients thoroughly with a whisk,
  • Add the melted butter to the mixture and mix,
  • Add the almonds and mix them gently with a spatula without breaking the almonds,
  • Spread greaseproof paper on a baking tray and lightly brush it with oil. You can choose a lubricating spray or use a silicone baking mat (silpat) for this,
  • Take a spoonful of the mixture and spread it on wax paper. You can also use a metal circle for a smoother look,
  • Soaking the fork or spoon in cold milk will prevent the mixture from sticking,
  • Bake for about 4-8 minutes at 180 °C until all the tuiles turn golden yellow,
  • Depending on the oven, one side may cook faster than the other. In this case, you must first remove the cooked items from the oven with a spatula so that they do not burn.
  • If you wish, leave it on a rolling pin, bottle, glass or any other curved object while it is hot right after it is just coming out of the oven, and let it cool and shape.
  • The tuile is soft when warm. As they cool, they harden and harden and become brittle. We recommend that you store the Tuiles in an airtight container. You can serve almond tuiles with tea or coffee or with any ice cream or dessert. Bon Appetit!
