Turkish Bagel Recipe: Classic Sesame Simit

  • flour all-purpouse – 4 cups
  • water warm – 1 cup
  • sugar granulated – 1 tablespoon
  • yeast instant – 1 pack (10g)
  • salt, 1 teaspoon

for Topping

  • water – 1/4 cup
  • molasses – 1/4 cup
  • sesame seeds
  • granulated sugar – 1 cup (instead of molasses)

Turkish Bagel Recipe Dough

Add 1 tablespoon of powdered sugar to warm water and mix. Add the yeast and mix. Wait 5-10 minutes for the yeast to activate. Sift the flour in a bowl, add the salt and open a pool in the middle. Add the leavened water mixture and oil and knead for 10 minutes until it reaches a slightly firm consistency that will not stick to the hand.

After the kneading process is finished, let the dough rest for a minimum of 30 minutes (better if you let it rest for 1 hour). From your dough, cut a total of 8-10 equal pieces of meringue and roll it. Cover it with a clean cloth.

Turkish Bagel Preparation

Take a cloth on the counter. Wick from the middle to the outside until it is about 60-70 cm long. While driving one end of the wick forward, pull the other end back, hold the ends without missing, and join them together. Connect the two ends again and this time, bring your hand back and forth on the counter from the inside of the bagel and close the ends. Cover them with a cloth on a tray and rest for 20 minutes.


To make molasses mix, mix cold water with molasses. Likewise, instead of molasses, you can turn the sugar into caramel, mix it with water and cool it. For this, add sugar to a teflon pan and turn on the stove. Wait for a while without touching the sugar, it will start from the edges and turn into caramel. After melting evenly and caramelizing, add hot water while the pan is hot and stir.

On the side, put lots of sesame seeds in a large bowl to work with. First, spread the simit a little by hand and dip into the molasses mixture, then add sesame seeds and place them on a baking tray. Bake in a preheated oven at 180 degrees for 25 minutes.
